‘Khao Phan Phak’, an ancient recipe from Laplae, passed down from generation to generation

Ms. Rattana Meetiam, or Mon Kaew, 57 years old, the owner of the house and shop 'Huan Mon Kaew Khao Phan Pak Laplae' is preparing the front of the shop to welcome customers. The atmosphere of the shop is clean and inviting. The equipment and materials are covered with thin white cloth to prevent dust and flies. The cups, plates, and spoons are in plastic bags. Ms. Rattana or Mon Kaew is busy p reparing the menu that customers call to order according to the queue. Even though Mon Kaew is everything for customers in the shop, she is the only one who provides everything in the shop. But customers do not have to wait long because Mon Kaew is very skilled and experienced and makes it every day. In addition, 'Khao Phan Phak' is a local food of the people of Lablae that has been passed down from generation to generation, creating jobs and income. It depends on each shop to adapt the menu to be diverse and create a selling point for their shop. Mon Kaew said that Khao Phan Pak is a traditional food of the Lablae people since ancient times. It is unique in that it is a 'rice menu' that does not contain even a single grain of rice. The main ingredients are rice flour mixed with water in the correct proportions. Then, scoop it and spread it on a cloth stretched over the mouth of a clay pot. A hole is made at one corner to allow steam to rise up. The clay pot is placed in a large pan of boiling water (similar to making Khao Kreab Pak Mo). The steam is used to cook it. Vegetables, bean sprouts, carrots, and glass noodles are put in. The lid is closed until the flour and vegetables are cooked before being wrapped and placed on a plate. Sprinkle with fried garlic and chopped coriander. This is a truly ancient recipe. Eat it with the restaurant's special dipping sauce. 'Nowadays, Khao Phan Pak has been adjusted to be more appetizing and nutritious, so there are many menus. At Huen Mon Kaew Khao Phan Pak Lab Lae, there are more than 20 menus, not including Som Tam, such as Khao Phan Pak with Egg, Khao Phan Pak with Yellow Noodles, Khao Phan Pak Mama, Khao Phan Song Khrueng, Khao Phan Egg Roll with Golden Needle Mushroom, Khao Phan Egg Roll with Yellow Noodles, Khao Phan Egg Roll with Crab Sticks, etc. The menu focuses on pleasing customers of all ages, young children, teenagers, adults, and the elderly, and the prices are not expensive, 20-30 baht will fill you up.' Mon Kaew said that the signature dish of the restau rant and the one that customers must order is 'Spicy Thai Salad with Crispy Wontons'. Wontons are cut into strips and fried until crispy. They can be used instead of papaya strips. When you eat it, it is creamy and crispy. It is the only one in the restaurant. It costs only 40 baht per plate. It is eaten with rice wrapped in vegetables and 3 types of dipping sauces: chili powder sauce, traditional fermented bean curd sukiyaki sauce, and regular sukiyaki sauce. The shop's "rice wrapped in vegetables" is considered a "job-creating heritage". Mon Kaew is now the 4th generation.
