Khon Buri:Villagers in Khon Buri District, Nakhon Ratchasima Province, have embarked on their annual tradition of venturing into the forest at the foot of Chom Thong Mountain in Jorakhe Hin Subdistrict to forage for "wild bamboo shoots." These shoots are a seasonal delicacy available only during the rainy season and are used to prepare the signature dish "Gang Nor Bong," or bamboo shoot curry.
According to Thai News Agency, the "wild bamboo shoots," also known as "Nor Bong Pa," are prized for their sweet, crispy taste and are considered tastier than typical larger bamboo shoots. These shoots are small, larger than "Nor Pek" or "Nor Jod," and are naturally found only during the rainy season.
The local preparation of "wild bamboo shoots" involves peeling, washing, and cutting them into sections. Unlike larger bamboo shoots, there is no need to slice them into strips. After being lightly pounded to break the membranes, the shoots are boiled in salted water to reduce bitterness. They are then simmered in yanang leaf water with curry paste, galangal, salt, and fermented fish sauce. Additional ingredients like cha-om shoots or bitter honey mushrooms are added for enhanced texture and flavor, with basil leaves sprinkled on top to complete the dish.
