Mr. Anukul emphasized the importance of using local wisdom to enhance the economic value of Thai fermented foods, particularly in the food sector, which serves as a significant component of Thailand's soft power. The unique identity and long-standing role of Thai fermented foods in promoting health make them prime candidates for sustainable entry into the global market, especially with the promotion of the "Khao Mak Thai" menu.
The push for Thai fermented foods is supported by research linking intestinal health to mental well-being, positioning 'Khao Mak Thai' as a functional food with cultural significance and health benefits.
